Ingredients:

  • 3/4 cup buttermilk (or milk)
  • 1/4 cup plain yogurt (or sour cream)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • Cooking spray or additional butter for greasing the pan

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the buttermilk, yogurt, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. It’s okay if there are a few lumps; overmixing can lead to tough pancakes.
  4. Preheat a griddle or non-stick skillet over medium heat. Lightly coat the surface with cooking spray or butter.
  5. Pour 1/4 cup portions of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges start to look set.
  6. Flip the pancake and cook the other side until it’s golden brown.
  7. Repeat until all the batter is used.
  8. Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
