Sumac-Spiced Chickpea Dip: A Modern Twist on Classic Hummus
Hummus is a staple of Mediterranean cuisine, but at Bodrum Foods, we believe even the most timeless classics deserve a modern upgrade. By introducing the citrusy, earthy notes of premium sumac, we transform a simple chickpea dip into a gourmet Sumac-Spiced Chickpea Dip that will be the star of your next mezze spread.
The Magic of Sumac
If you haven't cooked with sumac yet, you are missing out on the "secret weapon" of Aegean chefs. Unlike lemon juice, which adds liquid acidity, Bodrum Sumac provides a dry, tangy brightness that enhances the nuttiness of the chickpeas without thinning the dip's creamy texture. It adds a beautiful deep burgundy hue that makes the dish pop visually.
Using high-quality ingredients is the key to a "Modern Hummus." From the silkiness of the tahini to the robust flavour of Bodrum Organic Extra Virgin Olive Oil, every element counts.
Ingredients
- 1 can (400g) Bodrum Chickpeas, drained and rinsed
- 1/2 cup Premium Tahini
- 2 tbsp Bodrum Ground Sumac (plus extra for garnish)
- 3 tbsp Bodrum Extra Virgin Olive Oil
- 2 cloves of garlic, minced
- Juice of half a lemon
- A pinch of sea salt
- Optional: Fresh parsley and pine nuts for topping
Step-by-Step Preparation
1. The Secret to Creaminess: For an ultra-smooth "Modern" texture, boil the canned chickpeas in water with a pinch of baking soda for 10 minutes until they are falling apart. Drain and rinse with cold water.
2. Blend: In a food processor, combine the tahini and lemon juice first. Process for 1 minute until whipped and creamy.
3. Incorporate: Add the Bodrum Sumac, garlic, salt, and olive oil. Blend again.
4. The Chickpeas: Add the softened chickpeas. Process for 2-3 minutes until completely smooth. If it's too thick, add a tablespoon of ice-cold water while blending.
5. The Reveal: Spread the dip into a shallow bowl, creating "wells" with the back of a spoon. Drizzle generously with more olive oil and a heavy dusting of sumac.
"Modern hummus isn't just a dip; it's a canvas. The tangy zip of Bodrum Sumac creates a flavor profile that is both nostalgic and excitingly new."
