Weeknight Chickpea Stew with Bodrum Chickpeas in Tomato Sauce

Ingredients
- 2 cups cooked Bodrum Chickpeas
- 2 tbsp Bodrum Extra Virgin Olive Oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can chopped tomatoes (or 2 fresh tomatoes)
- 1 tsp Bodrum Paprika
- 1/2 tsp Bodrum Cumin Ground
- 1/2 tsp Bodrum Black Pepper
- Salt to taste (Bodrum Fine Himalayan Salt)
- 1 cup vegetable stock
- Fresh parsley for garnish
Instructions
- Heat Bodrum Extra Virgin Olive Oil in a pot and sauté onion until soft and golden.
- Add garlic and cook briefly, then stir in tomatoes and Bodrum spices.
- Add Bodrum Chickpeas and vegetable stock, season with Bodrum Himalayan Salt and Bodrum Black Pepper.
- Simmer for 20 minutes until flavors blend and stew thickens.
- Garnish with parsley and serve with bread or rice.
